Anywhere were env vars are set, in your shell, many programs set
them, like XCode. Things like CC=gcc-4.1 or
MACOSX_DEPLOYMENT_TARGET=10.3, or others. Now that I think about it,
the auto-builds use ./configure --enable-jack, and that has caused
problems in the past.
