I have no idea about cross-compiling, I have never tried it.  I don't  
think its possible at all since there are a number of Darwin/Mac OS X  
specific things like Frameworks, "install_name_tool", Apple extensions  
to gcc, etc.

In packages/darwin_app/Makefile, in the target "darwin_app_core:",  
change this line to suit:

	cd ../../pd/src/ && ./configure --enable-jack && make
