you can adjust each and every ctl available via the v4l2 driver from
within Gem.
see the [pd properties] subpatch in the help for pix_video.

the ps3eye gives me 10 controls with stock drivers (none of them dealing
with color correction, if they are labelled correctly).
i haven't tried the patch at [1] for a long time, but i remember having
good results "back then" (i mainly needed it the patch for being able to
adjust the imagesize/framerate, but it seems that it also allows some
color correction)
