Most of these should be listed to the right of the option in the menu.  For example, click the "Put" menu in a patch and you'll find the shortcut for creating an object is <Control-1>.

Global font size is saved per canvas.  Click the "Edit" menu, then choose "Font" to bring up the font dialog.

There's no way to change key bindings from within Pd, but they can be found in pd_bindings.tcl.
